Job Description

Job Title: Gardemanger

Reports to: Chef de Cuisine

Job Type: Hourly

I. Job Summary:

Assists Gardemanger Chef in Cold Kitchen. Prepares products according to recipes and standards. Ensures that our core values are maintained.

II. Job Duties and Responsibilities:

  1. Assists in preparation of all cold foods.
  2. Checks event orders and prep lists every morning
  3. Controls a prompt and steady pace through A La Carte service hours.
  4. Maintains a clean workstation throughout shift.
  5. Ensures machinery and equipment are kept clean and in good condition.
  6. Ensures qualities of all food preparation are strictly in compliance with the prescribed specification
  7. In charge of cold kitchen during the absence of Gardemanger No. 1
  8. Prepare, season and cook with appropriate methods all vegetables, starches, and proteins.
  9. Keep all food items correctly labelled and stored.
  10. Follow and enforce safety and hygiene standards.
  11. Communicate effectively with kitchen staff and management

III. Job Specifications

Experience: At least 2 years working experience

Professional qualification: Certificate in Culinary Arts preferred; must have, or be able to obtain, food safety certification (ServSafe or equivalent)

Skills: Knowledge of basic culinary terms, knife cuts and cooking techniques.

Physical requirements: Must possess the ability to stand for extended periods of time in a high temperature environment. Must be able to lift up to 45 lbs.
